Push open the door of Taberna Salinas and you step into the Spain of 1879. Montilla-Moriles barrels line the worn walls. Yellowed photographs show Córdobans from another century leaning on the same counter. The period floor tiles have kept their geometric patterns. Nothing here has really changed — which is either the point or the warning, depending on what you are looking for.

The atmosphere

People talk loudly here. Customers crowd the bar, call out to the server, debate the football. Tables fill the moment the doors open. People come as much for the noise and company as for the food itself.

The food

The menu has not shifted in decades. The tortilla is generous and soft in the middle. The croquetas are homemade, creamy. The jamón ibérico is carved to order in front of you. The salmorejo is one of the finest traditional versions in the city. The flamenquín comes out piping hot and properly sized. Montilla-Moriles wine pours straight from the barrel into your glass.

Practical details

No reservations. Arrive early — around 1pm for lunch or 8:30pm for dinner. Closes in August. Budget €15–25 with a drink. An authentic experience well away from the sanitised tourist trail.
