Sociedad Plateros María Auxiliadora was founded in 1880 by the local silversmiths' guild. Since 2011 it has become one of Spain's most carefully managed gluten-free dining rooms — not by adapting a few dishes, but by rebuilding the kitchen protocols from the ground up.

The building itself is worth the visit. Rooms with vaulted ceilings and period-tiled floors open onto an inner courtyard shaded by centenarian orange trees. The walls carry yellowed photographs of silversmiths at work — this professional heritage is the source of the place's identity.

What the certification actually means

The kitchen has dedicated gluten-free preparation areas with strict separation from conventional cooking. Crockery and utensils are distinct. Staff are trained specifically in coeliac disease and cross-contamination risk — not just told to skip the bread.

Certification from FACE (the Spanish Federation of Coeliac Associations) confirms that every single dish on the menu is available safely. The salmorejo uses homemade gluten-free bread. The flamenquín gets a certified breadcrumb coating that crisps properly. The rabo de toro, slow-braised for hours, arrives without anxiety. The croquetas de rabo de toro are creamy inside, properly golden outside.

The food itself

Cordoban cooking done well. The cellar features Montilla-Moriles wines from bodegas across the region — dry pale fino through to complex amontillado. On certain evenings, flamenco performances happen at the tables. Service is attentive and takes the time to explain, without making coeliac guests feel like a complication.

Beyond Córdoba

Spanish coeliac associations consistently recommend this address. It is a natural stop on the Montilla-Moriles wine route and features in gastronomic food tours of Córdoba adapted for gluten-free diets. Classic dishes — tortilla de patatas, berenjenas con miel, traditional Andalusian desserts — are all available.
